Easy Roasted Stone Fruit: The Most Delicious Recipe

This is the perfect recipe for a party or potluck! It features peaches, apricots, cherries and plums roasted to perfection. The sweet and tart flavors of the stone fruit can be complemented by serving with creamy mascarpone or vanilla ice cream.

Ingredients
  

  • 2 lbs stone fruit (peaches, cherries, plums, apricots, etc), washed, pitted and halved or quartered
  • ¼ cup brown sugar
  • ¼ cup pineapple juice
  • ¼ cup salted butter, melted
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • 2 sprigs rosemary

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Arrange fruit on a baking sheet, skin side down.
  • In a bowl, whisk together melted butter, pineapple juice, vanilla extract and cinnamon.
  • Drizzle mixture over stone fruit. Place rosemary sprigs on top of fruit.
  • Bake for 20 - 25 minutes or until tender. See notes.
  • Serve warm with creamy mascarpone or vanilla ice cream.

Notes

Depending on the size and ripeness of your fruit some may need to be removed before the others are ready. Or you can stagger what is in the oven. For example, we didn't add the cherries to the pan until the other fruit reached 10 minutes.
