What Is Keto Fudge?

Keto fudge is a low carb, indulgent dessert that has all of the taste of a traditional fudge recipe without the carbs. Our recipe uses a monk fruit blend as the sweetener, as well as unsweetened cocoa powder and low carb dark chocolate chips. The cream cheese and butter create a rich and creamy texture that is sure to satisfy any sweet tooth.

What is Monk Fruit?

Monk fruit is a type of fruit that is about 150 times sweeter than sugar. It has a very intense sweetness and no aftertaste. For our fudge we used Lakanto’s Monk Fruit Sweetener.

Ingredients Needed to Make Keto Fudge

  • cream cheese – Softened at room temperature
  • unsalted butter
  • vanilla extract – The real stuff!
  • low carb sweetener – Monk fruit, stevia, swerve, etc. in powdered/confectioner form. Powdered sweetener will work much better than the granulated sweetener in this recipe. We didn’t have powdered on hand, so we blended the monk fruit granules in a mixer until it was a fine powder.
  • unsweetened cocoa powder
  • low carb chocolate chips – We used the dark chocolate chips by Lily’s which are sweetened with stevia but you can opt for unsweetened chocolate since we’re adding additional sweetness with the Monk Fruit blend.
  • kosher salt
  • walnuts – Optional topping.
  • flaky sea salt – Optional garnish. We use Maldon’s Flaky Sea Salt. Coarse sea salt is a great alternative.

How to Make Keto Fudge

In a double boiler over medium heat, melt the chocolate chips and butter. You can alternatively melt in the microwave in 30 second intervals, stirring at each interval.

Using a hand mixer, blend your sweetener of choice, softened cream cheese, kosher salt and vanilla extract until creamy and well combined.

Pour in melted butter and chocolate and mix until combined, preferably with a silicone or rubber spatula.

Stir in unsweetened cocoa powder. Give the mix a taste and adjust sweetness if desired.

Pour the fudge mixture into the prepared pan spreading in an even layer. Optional: top with your nuts of choice and the flaky sea salt.

Refrigerate for at least an hour or freeze to set faster before slicing and serving.

Remove from the fridge and cut fudge into even squares.

How to Store Keto Fudge

Store the fudge in the refrigerator in an airtight container for up to 5 days or freeze for up to 3 weeks.

Alternative Low Carb Sweeteners

As mentioned earlier, we used Monk Fruit to sweeten our fudge. While our mission at Gimme From Scratch is to do away with processed foods we sometimes make exceptions. While these sweeteners are all processed or even man-made we are okay with using them on occasion when we want to decrease our sugar intake but enjoy a delicious treat.

1. Erythritol

Erythritol is a type of sugar alcohol that is about 70% as sweet as sugar. It is found naturally in some fruits and vegetables, but it can also be produced synthetically. Swerve is our favorite brand of erythritol. The powdered version is perfect for this recipe.

2. Xylitol

Xylitol is another type of sugar alcohol that is about as sweet as sugar. It is found naturally in some fruits and vegetables, but it can also be produced synthetically.

3. Stevia

Stevia is a plant-based sweetener that is about 200 times sweeter than sugar. It has a slightly bitter aftertaste, but this is generally not noticeable when stevia is used in small quantities. Stevia would be our least favorite option to use in this fudge recipe due to the strong aftertaste.
