Stone Fruit – We chose to use peaches, cherries, plums, & apricots. Wash, pit and halve or quarter your fruit. We quartered the peaches, plums and apricots and halved the cherries.
Brown Sugar – light or dark
Pineapple Juice – You can substitute with orange juice, lime juice or lemon juice
Melted Butter – we used salted in this recipe but unsalted butter is fine as well.
Pure Vanilla Extract – or vanilla bean paste
Ground Cinnamon
Fresh Rosemary – adds a subtle herbal flavor that complements the roasted fruit
How to roast the stone fruit
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper or a silicone mat.
Arrange peaches, apricots and plums in a single layer on the baking sheet, cut-side up. Cherries will go in later.
In a small bowl, whisk together melted butter, pineapple juice, vanilla extract and cinnamon.
Drizzle mixture over stone fruit on the baking sheet reserving a bit of the mixture if you are using cherries. While peaches, plums and apricots are baking toss the cherries with the rest of the mixture.
After ten minutes of baking, place the cherries in the oven on the baking sheet.
Bake for an additional 10 – 15 minutes or until all fruit is tender. Remove from oven and discard the rosemary.
Serve fruit warm or at room temperature with sweet creamy mascarpone (recipe coming soon), cottage cheese or vanilla ice cream. Or drizzle some balsamic vinegar glaze over the top. This roasted fruit would also be great with pound cake, oatmeal and yogurt!

- 2 lbs stone fruit (peaches, cherries, plums, apricots, etc), washed, pitted and halved or quartered
- ¼ cup brown sugar
- ¼ cup pineapple juice
- ¼ cup salted butter, melted
- 1 tsp vanilla
- ½ tsp cinnamon
- 2 sprigs rosemary
Instructions
- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- Arrange fruit on a baking sheet, skin side down.
- In a bowl, whisk together melted butter, pineapple juice, vanilla extract and cinnamon.
- Drizzle mixture over stone fruit. Place rosemary sprigs on top of fruit.
